Woo! So, this is the first entry of a new section I’m going to start doing about vegan food. The focus of this will mainly be on main course meals and deserts.
I was looking through some recipes tonight because I had decided I was going to make something tomorrow, and I came across the following recipe. As it turns out, I already had all the ingredients I needed (with the exception of the optional maple syrup) so I went ahead and made them on a whim. Check the recipe out below the image…
Peanut Butter, Oatmeal and Banana Cookies
(original recipe found here, but slightly modified)
- 1/3 cup chunky peanut butter
- 2 ripe bananas
- 2 tsp vanilla
- 2 tbsp vanilla soy milk
- 2 tbsp maple syrup (optional, but recommended)
- 2 1/2 cups quick oats
- dash of cinnamon
- 1/4 cup wheat (or whole wheat) flour
Mash the bananas and whip them with a fork until they are smooth. Add the peanut butter, soy milk, vanilla and optionally the maple syrup and continue stirring until smooth again. Finally, add the quick oats, flour and cinnamon and stir again. By this point, you should have a fairly solid mixture, a sort of sticky oatmeal look.
Form the mixture into individual cookie sizes and put them on an ungreased cookie sheet (or any sort of pan covered in tinfoil, less cleanup). The original recipe says 13-16 minutes at 350 degrees, but in the future I’d cook them for a little bit under the suggested 13 minute minimum, certainly no more than 13.
And that’s it! Really fast to make and they came out damn good.
